Mandarin, Chicken and Cheese Salad
Bright, sunshine-in-a-bowl, and quick to make! This mandarin, chicken, and cheese salad is often served for New Year’s, but it’s so simple and tasty it’s great for Sunday family lunch too. You can swap ingredients to taste, choosing different cheeses.

Preparation
Step 1
How do you make a mandarin and chicken salad? Prepare the ingredients. I used one chicken breast, but you can use other chicken parts. Instead of processed cheese, you can use any hard or semi-hard cheese, grated. Choose mandarins with thin membranes on the segments.
Step 2
Boil the chicken fillet in salted water until done. Remove the meat from the broth, let it cool, then cut into small cubes. Use the broth as you like; you won’t need it for this recipe.
Step 3
Peel the mandarins and separate into segments. Cut each segment into 3 pieces. If the membrane is thick, carefully remove it from each segment without damaging the juicy flesh. Also remove any white pith.
Step 4
Put the processed cheese in the fridge for 20 minutes so it’s easier to cut. Then dice it into small cubes. You can also grate it on a medium grater for a more delicate salad.
Step 5
Finely chop the shelled walnuts. To remove bitterness from the skins, you can soak the nuts in boiling water for 2-3 minutes. Drain and pat dry.
Step 6
In a suitable salad bowl, combine the cooked chicken cubes, diced processed cheese, chopped mandarin pieces, and walnuts.
Step 7
Dress the salad with mayonnaise and mix. Homemade mayonnaise works best.
Step 8
Serve the salad shaped in a culinary ring. Place the ring on a plate, fill it with the salad, and press it down. Refrigerate for 1 hour to let it set. Before serving, remove the ring and garnish with mandarin segments, parsley sprigs, and walnuts. Enjoy!
