Lohikeitto - Finnish Creamy Salmon Soup
Rich, creamy, flavorful, and healthy! Lohikeitto is a Finnish fish soup with cream, surprisingly simple to prepare. Add finely chopped dill, green onion, and thyme for extra aroma.

Preparation
Step 1
For the broth, use the head, tail, fins, and backbone of the fish. For the soup itself, use salmon fillet or steak.
Step 2
Remove the gills from the head, clean the head and tail from scales, rinse, and place in a small pot. Add 1 bay leaf and a few black peppercorns, then bring to a boil. Remove the foam that forms on top - this keeps the broth clear. Simmer for 10-15 minutes.
Step 3
Meanwhile, prepare the vegetables: peel potatoes, carrots, and onions. Traditionally, leek is used - add it if possible. Rinse and pat dry.
Step 4
Slice the carrots into thin rounds, the onions into half-rings or cubes, and the potatoes into medium-sized cubes or sticks.
Step 5
Heat some neutral vegetable oil in a pot with a thick bottom. Add the carrots and onions, sauté while stirring until soft.
Step 6
Add the potatoes. You can adjust the quantity to make the soup thicker or thinner.
Step 7
Pour in the fish broth, add salt to taste, and cook over medium heat until the potatoes are tender (10-20 minutes).
Step 8
Cut the salmon fillet into medium cubes.
Step 9
When the potatoes are ready, remove a few pieces, mash them with a fork, and return to the soup - this thickens it.
Step 10
Add the salmon cubes to the pot. Cook for 5 minutes, just until done - do not overcook or the fish will dry out.
Step 11
Pour in heavy cream (at least 30% fat). If the soup is too thick, add a bit of boiling water. Check for salt and adjust if needed.
Step 12
Bring the soup to a boil over high heat, add finely chopped dill and green onion, and immediately remove from the heat.
Step 13
Season with black or allspice pepper and serve hot. Enjoy this creamy Finnish delight!
