Preparation
Step 1
Prepare all your ingredients.
Step 2
In a bowl, mix the flour, baking powder, salt, and poppy seeds.
Step 3
In another bowl, combine the soft butter, sugar, and grated lemon zest. Beat well.
Step 4
Then add the eggs one at a time, beating thoroughly after each addition.
Step 5
Add half of the flour mixture to the butter and egg mixture. Beat until combined.
Step 6
Pour in the milk and lemon juice. Beat again.
Step 7
Finally, add the remaining flour and mix once more - do not overmix.
Step 8
Divide the batter into muffin molds. Bake in a preheated oven at 160 °C for about 25 minutes. Check with a wooden skewer - it should come out clean. Let the baked muffins cool completely on a wire rack.
Step 9
While the muffins are cooling, prepare the frosting - in a bowl, combine the cream cheese, butter, powdered sugar, and lemon juice. Beat well until smooth and thick.
Step 10
Decorate the muffins with the frosting and any additional toppings you like.
