Lemon Crinkle Cookies

Preparation
Step 1
Prepare all ingredients. Use high-grade flour. Choose large eggs. Butter must be room temperature, so take it out ahead of time.
Step 2
In a bowl, beat the soft butter with sugar until fluffy. Do not reduce the sugar - the amount is needed so the cookies don’t become too sour from the lemon juice.
Step 3
Wash and dry the lemons. Grate the zest carefully, avoiding the bitter white layer. Juice the lemons. Add eggs, lemon juice, and zest to the bowl. Beat until smooth.
Step 4
Sift flour with baking powder and salt. Add half first, check the consistency, then add the rest. If needed, add 1-2 tbsp more flour. Do not add too much right away - the cookies may turn hard.
Step 5
Knead a smooth, soft, pliable dough. It shouldn’t stick to your hands but should feel slightly tacky and hold its shape well.
Step 6
Wrap the dough in plastic wrap and refrigerate for 1 hour. Preheat the oven in advance so it reaches temperature on time.
Step 7
Pour cane sugar into one bowl and powdered sugar into another. You may use white sugar instead of cane sugar.
Step 8
Pinch off pieces of chilled dough (about 45–50 g each) and roll into balls. Coat each ball first in cane sugar, then in powdered sugar - never the other way around.
Step 9
Place the dough balls on a parchment-lined baking sheet, spaced apart. Do not shape them - they will round and crack naturally. Bake at 350°F (180°C) for about 12 minutes. If your oven has a “top+bottom+convection” mode, use it.
Step 10
Cool the baked lemon cookies and serve. They are great plain, with ice cream, or whipped cream. Pack them into a pretty jar for a lovely gift. Enjoy!
