Korean-Style Cucumber Salad for Winter (Canned)

Preparation
Step 1
First, prepare all the ingredients and spices for this flavorful winter dish.
Step 2
Take a medium bowl and a garlic press. Press 1 head of garlic and place it into the bowl.

Add 1 tablespoon of coarse non-iodized salt, ½ cup (125 g) of sugar, ½ cup (125 ml) of 9% table vinegar, and mix everything thoroughly.
Step 4
Add 15 g (about 1 tablespoon) of Korean-style carrot seasoning mix and stir again.
Step 5
Pour in ½ cup (125 ml) of vegetable oil, mix well - your garlic dressing is ready.
Step 6
Using a coarse grater, shred about 4½ pounds (2 kg) of cucumbers into thin strips and transfer them to a large enamel basin.
Step 7
Grate 1 pound (500 g) of carrots on a fine grater into thin strips and add to the cucumbers.

Pour the prepared garlic dressing over the vegetables in the basin.

Mix everything thoroughly with your hands and let the salad rest for 30-40 minutes, allowing the cucumbers to release their juice.

After resting, transfer the salad into three sterilized 1-liter (34 oz) jars and pour the released vegetable juice over the top.

Place the jar lids into a deep bowl and pour boiling water over them to sterilize.

Fill a large pot with water, line the bottom with a kitchen towel, and place the jars (covered with lids) inside. Heat until the water reaches the shoulders of the jars.

Bring to a boil and sterilize on low heat for 15 minutes. Then seal the jars tightly with lids, flip them upside down to check for leaks, and cover with a warm blanket until completely cool.
