Kefir Bread without Yeast

Preparation
Step 1
It’s best to use full-fat kefir. In addition to the main ingredients, I added roasted sunflower seeds and caraway - they go perfectly with this bread, but you can omit or replace them with something else.
Step 2
Sift the wheat flour through a fine sieve into a large bowl to enrich it with oxygen - this helps make the bread lighter and fluffier.
Step 3
Add sugar and salt to the flour and mix well.
Step 4
In a separate bowl, add baking soda to the kefir and stir thoroughly. The kefir should be at room temperature, so take it out of the fridge in advance or warm it slightly in the microwave.
Step 5
Pour the kefir into the flour mixture and knead a soft, slightly sticky dough, adding flour as needed. You may need more or less depending on your flour type. Don’t add too much - otherwise, the crumb will turn out dense. I used about 50 g (1.7 oz) extra, which gave me a medium-density loaf. For a fluffier texture, keep the dough soft and slightly tacky.
Step 6
Toast the sunflower seeds in a dry skillet until lightly golden.
Step 7
Add the toasted sunflower seeds and caraway (optional) to the dough. Mix thoroughly so that they are evenly distributed.
Step 8
Shape the dough into a ball.
Step 9
Cover it with plastic wrap and let it rest at room temperature for 30 minutes.
Step 10
Shape the dough into a loaf and place it on a parchment-lined baking sheet or into a loaf pan.
Step 11
Make shallow cuts on top and sprinkle lightly with flour. Bake for 20 minutes at 220°C (425°F), then reduce to 200°C (390°F) and bake for another 30 minutes. Adjust time and temperature to your oven.
