How to Freeze Plums for Winter
An ideal prep for baking and drinks! If you don’t know how to freeze fresh plums properly, follow the tips in this recipe - it’s very easy. Frozen plums can be used for compotes, baking, sauces, and desserts. Any variety works: sweet or slightly tart fruit.

Preparation
Step 1
For this prep, choose sweet, ripe plums with tart skin and firm flesh. They’re easier to handle when removing the pits.
Step 2
Sort the plums, removing any stems, and rinse under cold running water. Wash thoroughly to remove as much dirt as possible. Drain in a colander until the water runs off. Pat dry with paper towels. Extra moisture will create a lot of frost in the packages during freezing.
Step 3
Using a small knife, make a lengthwise vertical cut along each plum. Be careful not to cut yourself!
Step 4
Twist the two halves in opposite directions around the pit - this makes it quick and easy to remove pits. I use the same method for any fruit with a large pit, especially avocado and mango.
Step 5
You can peel the skin off or leave it on - totally optional. Decide based on what you’ll use the plums for. If you plan to use them for purée or sauce, peel them. You can also cut the fruit any way you like. I’m going to bake my favorite pie with these plums, so I’ll keep them as halves.
Step 6
The main rule: freeze in small portions and pack correctly so the fruit doesn’t clump together. Divide the prepared plums into small portions - about enough for one dish. Arrange in a single layer in sturdy freezer bags made for freezing. You can also use vacuum-seal bags, zip-top bags, or even freezer-safe containers.
Step 7
Store the plums in a freezer at -18°C (0°F) or colder for 6-12 months. Read the article after the recipe about proper thawing. Refreezing is not recommended. Serving ideas: compote, pie filling, smoothies.
