How to Freeze Cucumbers for Winter (Fresh)
Summer freshness in any winter salad! To keep fragrant green cucumbers on hand all year, use freezing. You won’t get 100% “fresh” after thawing, but they’re great for brightening vegetable dishes. Let’s save cucumbers for winter in a fresh way!

Step 1
How do you freeze fresh cucumbers for winter? Choose fresh, firm pickling-type cucumbers (bumpy/spiny). You can use smooth-skinned cucumbers too, but they’re available almost all year anyway. Rinse the cucumbers thoroughly under running water to remove any soil. Let the water drain well - otherwise extra ice crystals will form in the package.
Step 2
Trim the ends off the cucumbers on both sides.
Step 3
Slice the cucumbers any way you like. You can even grate them on a coarse grater. The cut depends on what dishes you plan to use them in. I chose thin matchsticks for salads.
Step 4
I’m freezing the cucumbers in thick vacuum-sealer bags. But any sturdy freezer-safe bag works, including zip-top bags, or even a plastic container. In any case, it’s best to freeze small portions - about enough for one dish - so they thaw faster and more conveniently.
Step 5
Seal the cucumbers with a vacuum sealer or your chosen method. Set the vacuum sealer to low pressure so it doesn’t crush the delicate cucumbers.
Step 6
Label each bag with the freezing date to track freshness. Store in a freezer at -18°C (about 0°F) or colder. They can keep all winter.
