An incredibly healthy preparation and a real treasure trove of vitamins! Drying rose hips in the oven is amazingly simple. From now on you won’t need to buy dried berries – you’ll prepare them yourself. It’s best to store them in a dry place, in a cloth bag, away from direct sunlight.

Preparation
Step 1
How do you prepare rose hips for winter? When should you pick the berries? It’s best to harvest rose hips at the end of September or in October before the cold nights start. The berries picked in October contain the most vitamins and keep many beneficial properties.
Step 2
So, pick the rose hips.
Step 3
Sort the berries, discard spoiled or blackened ones, remove any dried flower remnants if there are any. At this stage it’s better not to remove the stems - it will be much easier and faster to cut them off later, after drying.
Step 4
There are two ways to dry rose hips: natural drying indoors/outdoors in the shade or drying in the oven.
Step 5
For oven drying, line a rack or baking sheet with parchment paper. Spread the berries in an even layer. Turn the oven on to 50°C (about 120°F) and leave the rose hips to dry for 2-3 hours. From time to time open the oven door for 5-10 seconds to let the moisture escape. Then increase the temperature to 70°C (about 160°F) and leave the rose hips for another 5-6 hours. Also don’t forget to occasionally open the oven door. It’s worth stirring the berries now and then so they dry evenly.
Step 6
Store the dried rose hips in glass jars with small holes in the lids or in cloth bags, in a dry, dark place.
