Homemade Mustard from Mustard Powder

Step 1
You can use any vegetable oil you like. Take bottled, filtered or boiled water. It’s better to use fine salt.
Step 2
Pour some vegetable oil on the bottom of a clear glass or jar. It will keep the mustard powder from sticking to the bottom while mixing. Transparent walls also help you see where any dry powder remains, so you can mix more thoroughly.
Step 3
Put the mustard powder into the glass with the vegetable oil.
Step 4
Add salt and sugar. Stir a little.
Step 5
Now gradually add warm (not hot!) water. Don’t rush: pour in a little, stir, then add a bit more and stir again. Mustard absorbs water very well; add just enough to get a texture similar to not-too-thick sour cream. There shouldn’t be a single dry spot left in the glass.
Step 6
Add a little lemon juice and leave the mustard for several hours in a warm place to infuse and “mature”. Matured mustard becomes hotter and more pungent.
