Homemade Cottage Cheese Cookies with Jam Filling

Step 1
How do you make cottage cheese cookies with jam filling? Prepare the ingredients. Use soft, paste-like cottage cheese.

Place the cottage cheese in a large bowl.

Crack and add two eggs to the bowl.

Add 2 tbsp sugar.
Step 5
Add 1 tsp vanilla sugar.
Step 6
Add salt to taste.

Add butter.

Blend everything in the bowl until smooth.

Sift flour into the cottage cheese mixture. Keep in mind you may need a little more or less flour.

Add 1 tsp baking powder and mix.

Mix everything and knead the dough. The dough should turn out soft.

Gather the dough into a ball, put it in a bag, and refrigerate for 30 minutes.

Put 3 tbsp jam or preserves (to your taste) into a bowl, add 1 tbsp starch, and mix.

After 30 minutes, place the dough on a table lightly dusted with flour.

Shape the dough and divide it into several roughly equal pieces.

Flatten each piece into a patty about 0.5 cm (about 0.2 in) thick.

Put the needed amount of jam onto each patty - about ½ tsp.

Seal each patty with the jam filling tightly.

Shape the cookies and place them on a baking sheet lined with parchment paper.

Use a spatula to make any patterns on top of the cookies.

Bake in an oven preheated to 200°C / 392°F for about 15-20 minutes, depending on cookie size. Baking time may vary with your oven.

After about 20 minutes, remove the baking sheet with the cookies from the oven.
