Homemade Beer Cookies
From everyday ingredients, quick, fluffy and very appetizing! Beer cookies turn out especially tasty and crumbly thanks to the addition of the foamy drink. They contain just a few ingredients and are made quickly and easily. Both children and adults will enjoy these cookies.

Preparation
Step 1
You should first put the butter into the freezer so it firms up a bit and is easier to grate. I use light beer at room temperature. You can use a little less sugar, or make the cookies not very sweet. Sift the flour beforehand.
Step 2
Grate the frozen butter on a coarse grater into a large bowl. To make it easier to grate and so it doesn’t melt from the warmth of your hands, roll the butter in flour.
Step 3
Add the sifted flour and 2/3 of the total sugar. Mix everything thoroughly for a few minutes so small lumps form. In the end you get a loose mixture with lots of little clumps.
Step 4
Extinguish the baking soda with vinegar. To do this, take a tablespoon, put in a quarter teaspoon of soda and drip a small amount of 9% vinegar or lemon juice over it. The soda will foam up - the reaction releases carbon dioxide, which will make your cookies rise. Add the quenched soda to the dough.
Step 5
Pour the light beer into the dough and knead it by hand. The dough should be pliable and elastic and not stick to your hands at all. Shape the dough into a ball, wrap it in plastic wrap and place it in the refrigerator for 1 hour. Remember that you may need a little more or a little less flour; this depends on the flour and on the dough consistency. Don’t be alarmed by the alcohol in the dough: during baking it evaporates, leaving only aroma and helping the dough rise thanks to the beer yeast.
Step 6
Preheat the oven to 180 °C (about 350 °F). Take the chilled dough out of the fridge and roll it out on a floured surface into a sheet about 0.5 cm thick. Using round cutters or a glass, cut circles out of the dough.
Step 7
Sprinkle each circle with a little of the remaining sugar and fold it in half.
Step 8
Using a knife, make three even cuts along the rounded edge of each cookie. Sprinkle with sugar. If needed, you can brush each cookie with milk or beaten egg so the sugar sticks better. Place the cookie blanks on a baking sheet greased with oil or lined with baking paper. Put the sheet into the preheated oven for 20-25 minutes. The cookies should turn golden.
Step 9
Remove the finished cookies from the oven, take them off the baking sheet and let them cool. Serve the cookies with freshly brewed tea, a cup of coffee or a glass of milk. Enjoy your meal!
