Preparation
Step 1
In a saucepan, mix peanut butter with 1 cup of warm water until smooth and creamy.
Step 2
Simmer over low heat for 10 minutes, stirring often, until the oil begins to separate slightly.
Step 3
In a blender, combine tomatoes, onion, garlic, ginger, and chili, and blend until smooth. Pour into a large pot, add the tomato paste, and cook over medium heat for 10-15 minutes, stirring occasionally. Add the paprika, curry powder, salt, pepper, and stock cubes.
Step 4
Slowly pour the cooked peanut mixture into the tomato sauce while stirring.
Step 5
Add 3 more cups of water or stock to reach a soup-like consistency.
Step 6
If using chicken or meat, add it now and let everything simmer for 30-40 minutes, until the soup thickens and the oil rises to the top.
Step 7
Taste and adjust salt or spice as needed. Serve hot with boiled rice, white rice balls, or bread.
