Grilled Pork Tenderloin on the Charcoal Grill

Preparation
Step 1
Rinse the pork tenderloin and pat it dry with paper towels to remove any excess moisture.
Step 2
In a small deep bowl, pour refined vegetable oil and soy sauce. Add dry spices to the mixture. You can use any spice blend you prefer - garlic powder, dried basil or oregano, paprika, and mixed ground peppers go especially well with pork.
Step 3
Mix thoroughly until smooth. Add a pinch of salt only if necessary - remember, soy sauce is already salty.
Step 4
Pour the resulting marinade over the tenderloin. Massage it into the meat evenly with your hands.
Step 5
Place the tenderloin in a plastic bag and refrigerate it for at least 1-2 hours. The longer it marinates, the richer the flavor - ideally, let it marinate overnight.
Step 6
Light the wood in your charcoal grill (mangal). Once the wood burns down to embers, spread the coals evenly using a poker or similar tool.
Step 7
Place the marinated tenderloin on the grill rack. Cook, turning occasionally, until done. The cooking time will vary depending on the heat of your grill and the size of the tenderloin. To check doneness, make a small cut with a sharp knife - if the juices run clear, the pork is ready. I grilled mine for about 15–20 minutes.

Pork tenderloin is best served hot, right off the grill.
