Grilled Eggplants on a Charcoal Rack

Preparation
Step 1
Wash the eggplants and pat them dry with paper towels or a kitchen towel.
Step 2
Prepare the marinade. In a small bowl, mix tomato paste, vegetable oil, honey, soy sauce, and garlic powder. Add salt if needed, but soy sauce is already salty. Ketchup can be used instead of tomato paste.
Step 3
Cut the eggplants into slices about 1.5-2 cm thick.
Step 4
Using a silicone brush, coat each slice with marinade on both sides. Let them marinate while preparing the charcoal grill.
Step 5
Light the wood in the grill. Wait until it burns down to embers. Spread the embers in a thin layer.
Step 6
Brush the clean, dry grill rack with vegetable oil. Place the eggplants on the rack. Grill, turning constantly, until cooked.
Step 7
Eggplants cook very quickly. Time depends on the heat of the embers. About 5-7 minutes should suffice. Serve as is, or prepare a garlic dressing.
Step 8
In a separate bowl, mix vegetable oil with minced garlic.
Step 9
Brush each eggplant slice with a small amount of the garlic dressing. Sprinkle with finely chopped herbs like dill, young green onion, parsley, or cilantro. Mix herbs if desired.
