Green Tomatoes and Bell Peppers for Winter
An excellent summer appetizer saved for the cold winter days! Green tomatoes and bell peppers preserved in jars make a wonderful side for potatoes or meat. Bell peppers add a unique, tangy note and vibrant flavor to the tomatoes.

Preparation
Step 1
Choose firm, undamaged tomatoes without dark spots. Try to pick small ones of similar size.
Step 2
Remove the stems from the tomatoes. Pour boiling water over them and leave for 5 minutes.
Step 3
Meanwhile, wash and sterilize the jars in any convenient way. I used a water bath, and boiled the lids in water.
Step 4
Peel the garlic. Remove stems and seeds from the bell peppers. If possible, use thick, juicy peppers of different colors - your preserve will look bright and appetizing! Rinse dill umbrellas, hot peppers, and all other ingredients under running water.
Step 5
Finely chop the peppers (into cubes or thin strips).
Step 6
Mince the garlic or press it through a garlic press.
Step 7
Place dill umbrellas and a few chili pods on the bottom of each sterilized jar.
Step 8
Add a layer of the pepper mixture.
Step 9
Fill the jars with green tomatoes up to the top. Do not press them too tightly.
Step 10
Prepare the brine: bring water to a boil, add salt and sugar. Let it boil for a few minutes, then pour in the vinegar and immediately remove from heat.
Step 11
Pour the boiling brine over the tomatoes, cover with lids. Line the bottom of a wide pot with a towel, place the jars inside, and pour in warm water up to the “shoulders.” Bring to a boil, reduce heat, and sterilize for 15-20 minutes. Seal with lids.
Step 12
Turn the jars upside down and wrap in a warm blanket. Leave at room temperature until completely cooled.
Step 13
Done! Store in a cool place for long-term keeping.
