Preparation
Step 1
To make green cherry tomato salad for winter, prepare all the ingredients listed in the recipe.
Step 2
Sort the tomatoes and remove the stems. Rinse and pat dry the bell peppers. Peel the garlic.
Step 3
Cut the bell peppers in half and remove the cores with the seeds. Slice each half into strips or half-rings, as you prefer. For a more colorful and appetizing look, use peppers of different colors if possible.
Step 4
Wash the cherry tomatoes thoroughly in cold water. If some are larger, cut them in half.
Step 5
In a heavy-bottomed pot, heat the vegetable oil. Add the bell peppers and sauté until they get a golden tint. Remove them with a slotted spoon.
Step 6
In the same oil, add the cherry tomatoes. Cook them over high heat, stirring occasionally, for about 5 minutes.
Step 7
While the tomatoes cook, finely chop or press the garlic. Rinse the chili pepper. Adjust the amount of chili and garlic to your taste.
Step 8
Add the sautéed bell peppers, garlic, and chili to the tomatoes. Add salt and sugar. Stir occasionally and cook everything together for 5-7 minutes. Finally, pour in the vinegar, stir once more, and let it cook for about a minute.
Step 9
Sterilize the jars using any convenient method - in a microwave, over a water bath, or in the oven.
Step 10
Distribute the salad among the sterilized jars. Seal tightly with sterilized lids. Turn the jars upside down and cover them with a warm blanket. Let them cool completely at room temperature.
Step 11
Store the cooled jars in a cool place for long-term storage.
