Gorgeous Jam Muffins with Kefir
Simple, quick, and made from ingredients you always have at home! These light, fragrant, and fluffy muffins are truly gorgeous. Easy to make and eaten even faster! A perfect “guests at the door” recipe - you can use fresh berries instead of jam in season.

Preparation
Step 1
Take the egg and kefir out of the fridge beforehand so all ingredients reach room temperature. Batter rises better when all ingredients are the same temperature.
Step 2
Wash the egg with dish soap and dry it carefully. Crack the egg into a mixing bowl, add 1 cup of sugar, and beat well with a mixer until fluffy.
Step 3
Add 1 cup (240 ml) of room-temperature kefir, 3 tablespoons of refined, odorless vegetable oil, and a pinch of salt to the egg-sugar mixture. Mix well.
Step 4
Sift 2 cups (about 250 g) of flour together with 1 teaspoon of baking powder. Sifting adds air, making the muffins light and fluffy. Gradually add the flour mixture to the wet ingredients, mixing each time. The batter should be smooth and have the consistency of thick sour cream. Since flour differs by brand and humidity, add it gradually to avoid making the batter too thick. Mix until no lumps remain.
Step 5
Prepare silicone muffin molds. There’s no need to grease silicone ones - muffins will come out easily. If using metal or paper molds, lightly oil them. Place 1 tablespoon of batter into each mold, then 1 teaspoon of jam in the center.
Step 6
Add another tablespoon of batter on top of the jam to cover it completely. Fill the molds this way until the batter is used up.
Step 7
Preheat the oven to 350°F (180°C), top and bottom heat. While it’s heating, arrange the molds on a baking sheet. It’s easier to fill them separately and transfer afterward to avoid spilling batter on the tray.
Step 8
Once the oven reaches temperature, bake the muffins for about 20 minutes, or until a toothpick comes out dry. Baking time may vary depending on your oven. Here they are - beautiful, fluffy muffins! Perfect with tea or coffee. Enjoy!
