Preparation
Step 1
Heat oil in a pan. Add diced onions and sauté until soft. Add minced meat, season with salt, pepper, curry powder, and crumble in a stock cube if using. Cook until browned.
Step 2
Stir in tomato paste, peas, and grated carrot. Simmer for 5 minutes (add a splash of water if too dry). Let the filling cool completely.
Step 3
In a bowl, combine flour, salt, and baking powder. Rub butter into the flour until it looks like breadcrumbs. Add cold water a little at a time until dough forms. Knead briefly until smooth - don’t overwork it. Cover and rest dough for 10 minutes.
Step 4
Roll the dough to about 3 mm thick. Cut circles using a bowl or large cutter. Place a spoonful of filling inside each circle. Brush edges with beaten egg, fold into a half-moon shape, and press edges with a fork.
Step 5
Brush tops with egg wash. Bake at 190°C (375°F) for 25-30 minutes, or until golden brown.

Serve it with a salad, as a snack or finger food in a party.
