How to cook gabajou from pork at home in a Chinese-style sweet-and-sour sauce? Prepare all the necessary ingredients.
Step 2
Pound the pork and cut it into small pieces, then set aside. In Chinese cooking there is no concept of a table knife, so all ingredients are cut into small pieces so that they are easy to pick up with chopsticks and eat whole.

Wash and peel the carrot and pepper, then cut them into thin strips. Peel the onion and slice it into half-rings.

Peel the garlic and ginger and finely chop them.

Heat vegetable oil in a pot or pan with a thick bottom. To check if the oil is hot enough, use a simple method: dip a wooden spatula into the oil. If bubbles form around it, you can start frying.

Make the batter for frying the pork. Mix starch with ice-cold water, add the egg white. Add salt and pepper to taste and whisk everything with a fork or whisk. You should get a mixture that looks like a thick, foamy jelly.

Dip the pieces of pork into the batter and fry them in the hot oil. The color of the cooked meat should be white inside; do not overcook it.

In the same oil, fry the vegetables until they become translucent. Remove the cooked vegetables from the oil with a slotted spoon.

In a suitable saucepan, combine the ingredients for the sauce: water, soy sauce, vinegar, sugar, and starch. Add the chopped ginger and garlic.

Place the saucepan on the stove over medium heat. Stir constantly and watch the sauce: it will start to thicken. Depending on your preference, you can add more water or more starch. Once the desired consistency is reached, add the meat and vegetables to the sauce and mix. Let everything simmer over medium heat for about 5 minutes, then turn off the heat.
