Funchoza with Chicken and Mushrooms

Preparation
Step 1
Rinse the chicken fillet under running water and pat dry with paper towels. I cut the meat into thin strips lengthwise, about 2-3 cm long, but you can cut it into cubes or larger pieces if you like.
Step 2
Pour refined vegetable oil into a frying pan and heat it. Add the sliced chicken and fry, stirring constantly, until a golden crust forms.
Step 3
Rinse the champignons thoroughly from any dirt and lay them on paper towels to absorb excess moisture. Cut the mushrooms into medium slices.
Step 4
Heat some vegetable oil in a pan, add the sliced mushrooms and fry over low heat for about 5 minutes, stirring occasionally.
Step 5
Peel the onion and rinse it in cold water. Cut it into thin half-rings.
Step 6
Peel the carrot and cut it as you prefer: into sticks, thin strips, half-rings, or grate it on a coarse grater.
Step 7
Cut the washed bell pepper in half, remove the seeds. Slice the pepper into thin strips or small pieces.
Step 8
Place the funchoza (glass noodles) into a suitable pot and pour boiling water over it. Cover with a lid and leave for 15 minutes.
Step 9
After 15 minutes, pour the funchoza into a colander, rinse with cold boiled water and let the water drain. Use kitchen scissors to cut the noodles into shorter pieces.
Step 10
Pour refined vegetable oil into a frying pan and heat it. Add the carrot and fry for about 2-3 minutes over medium heat until it softens. Stir so it does not burn.
Step 11
Add the onion to the carrot in the pan. Continue frying for about 2 more minutes, until the onion becomes translucent.
Step 12
Now add the fried champignons and chicken to the pan and mix. In a separate bowl combine soy sauce, chili sauce and a little sugar. Pour this mixture into the pan and stir again, then taste. Add salt and pepper to your liking. Simmer the chicken with vegetables and mushrooms over low heat under a lid for about 3 minutes.
Step 13
Take a suitable large bowl. Put in the funchoza, chicken, mushrooms and vegetables. Mix everything well. Sprinkle with black and white sesame seeds on top. Let the dish sit for a few minutes to absorb the flavors. Serve the funchoza with chicken and vegetables hot. Before serving, garnish with fresh parsley or dill.
