Frying pan pizza
A quick stovetop-and-grill pizza with a crisp base, rich tomato sauce, melty mozzarella, and slices of salami. Fast, flavourful, and perfect for pizza night without needing an oven.

Preparation
Step 1
To make the dough, mix the flour with the baking powder and salt. Combine the olive oil and 100ml/3½fl oz water in a jug. Gradually pour the liquid into the flour, stirring until a dough forms. Knead for 1 minute until soft and pliable, then shape into a ball, cover with a damp tea towel, and let it rest for 5 minutes.
Step 2
Preheat a large frying pan until very hot and heat the grill to high.
Step 3
Grate the garlic into the tomato sauce, add the oregano, and season with salt and pepper. Stir to combine.
Step 4
On a well-floured surface, roll and stretch the dough into a large circle, leaving slightly thicker edges. Place the dough into the hot frying pan and cook until the base begins to lightly brown and the top surface looks slightly dry.
Step 5
Spread the tomato sauce over the base, then add the salami and mozzarella. Transfer the pan to the hot grill and cook until the cheese has melted and the crust has browned. Watch closely to prevent burning.
Step 6
Move the pizza to a serving plate and finish with fresh basil leaves and a drizzle of olive oil.
