Fried Zucchini with Garlic for Winter in Jars

Preparation
Step 1
For this recipe, choose young zucchini if possible - they have thin, tender skin and almost no seeds. Wash them thoroughly and pat dry with paper towels. If using mature zucchini, peel them and remove the seed core.

Peel the garlic cloves and rinse in clean water. Slice the zucchini into 0.3-0.4 inch (0.7-1 cm) thick rounds.
Step 3
This is the most time-consuming step - frying the zucchini. To speed up the process, use two pans at once. Heat odorless vegetable oil in a frying pan and place the slices in the oil. Fry until golden on both sides.
Step 4
Transfer the fried zucchini onto paper towels to remove excess oil.
Step 5
Press the garlic cloves through a garlic press. Rinse the dill heads. Wash and sterilize the jars and lids - you can do this in a water bath, microwave, or oven. Place a dill head and some garlic at the bottom of each jar.
Step 6
Make the first layer with fried zucchini slices. Add a pinch of salt and a bit more garlic.
Step 7
Continue layering zucchini, salt, and garlic until the jars are full. Shake the jars gently a couple of times to pack the zucchini more tightly.
Step 8
Pour about 20 ml (1.3 tbsp) of vinegar into each 0.5-liter jar.
Step 9
Cover the jars loosely with lids. Line the bottom of a large pot with a thin towel, place the jars inside, and pour warm water up to the shoulders of the jars. Bring to a boil and sterilize for 20-25 minutes. During sterilization, liquid will form and fill the jars completely.
Step 10
Seal the jars tightly and turn them upside down. Wrap them in a warm blanket and leave until fully cooled. Store the preserved zucchini in a cool, dark place for long-term keeping.
