Fried Meat Pies (Belyashi) with Ready Minced Meat and Kefir Dough
A wonderful homemade dish made from the simplest ingredients! A quick and easy recipe for fluffy, juicy Belyashi from yeast-free kefir dough with mixed minced meat, fried in a pan. These golden pies will surely surprise everyone with their rich flavor!

Preparation
Step 1
First, prepare all the ingredients and spices for making homemade fried Belyashi with meat filling.
Step 2
For the yeast-free dough, pour 500 ml (about 2 cups) of cold kefir into a large bowl.
Step 3
Add 1 tsp baking soda, 1 tsp salt, and mix well.
Step 4
Sift 700 g (about 5 ¾ cups) of all-purpose flour into the kefir mixture in two portions.
Step 5
Mix everything well and knead the dough. Add 2 tbsp vegetable oil and knead until smooth and elastic.
Step 6
Shape the dough into a ball, place it in a plastic bag, and let rest for 1 hour at room temperature.
Step 7
In a deep bowl, add 500 g (about 1 lb) mixed minced meat and 1 finely chopped large onion.
Step 8
Season with salt, ground black and red pepper, cumin, and coriander to taste.
Step 9
Mix everything thoroughly and let the filling rest while the dough is rising.
Step 10
After resting, place the dough on a lightly floured surface and knead it. Divide into two equal parts and keep one in a plastic bag.

Divide each half into several equal pieces and form small balls.

Flatten each ball into a small circle. Place 1 tbsp of meat filling in the center and spread evenly, pressing gently with a fork.
Step 13
Gather the edges of the dough toward the center and pinch them together, leaving a small hole in the middle. Place seam-side down.
Step 14
Heat 300-350 ml (1¼-1½ cups) vegetable oil in a skillet over medium heat. Place the Belyashi hole-side down and fry until golden brown on one side.
Step 15
Turn them over, pour 1 tbsp of hot oil into each hole, and continue frying until golden on the other side.
Step 16
Transfer the cooked Belyashi to a plate lined with paper towels. Serve hot.
