Fried Kefir-Dough Pies with Liver and Potatoes
They look appetizing just by their appearance! A great recipe for golden, fluffy, tender yeast-free pies with potatoes and liver - wonderfully tasty and sure to please.

Preparation
Step 1
To make these delicious fried pies, prepare the ingredients. Chop 2 onions not too finely, add them to a skillet heated with vegetable oil, and fry, stirring, until translucent.
Step 2
Cut 450 g beef liver into medium pieces.
Step 3
Add the liver pieces to the skillet with the onions.
Step 4
Fry the liver, stirring, for 10 minutes, then cover the skillet and cook for another 10 minutes.
Step 5
Add 1 tbsp butter to the skillet, then add nutmeg to taste.
Step 6
Add salt to taste and a mix of black and red pepper to taste.
Step 7
Mix everything well in the skillet.
Step 8
Cover the skillet, turn off the heat, and let the liver stand for 3 minutes.

Grind the cooked liver and 150 g boiled potatoes through a meat grinder into a bowl.

Mash and mix everything well until smooth and uniform.

Pour 300 ml room-temperature kefir into a large bowl.

Add 1 egg yolk.

Add 1 tsp salt and 1 tbsp sugar.

Add 2 tbsp sour cream.

Mix all the ingredients together well.

Sift in 500 g wheat flour in portions.

Add 1 tsp baking soda to the flour.

Knead the dough and add 2 tbsp vegetable oil to the bowl.

Gather the dough into a ball in the bowl.

Sprinkle a little flour on the table, place the dough on it, and knead for about 5 minutes.

Put the well-kneaded dough into a plastic bag for 20-30 minutes.

After the resting time, place the dough on a floured table, shape it, and cut it into 11 equal pieces.

Press each piece into a flat round (to the size you need).

Place the required amount of filling on each round.

Seal the edges very well around the filling.

Shape the pies to the desired size.

Pour 100 ml vegetable oil into a skillet and heat it. Place the pies seam-side down and fry over medium heat until golden on both sides.
