Fried Cauliflower with Egg in a Skillet

Preparation
Step 1
The number of eggs depends on the size of your cauliflower or how you plan to serve the dish. For breakfast, use more eggs. If serving as a side, one egg may be enough. Wash the eggs and dry them with paper towels.
Step 2
Rinse the cauliflower thoroughly under running water. You can even soak it briefly. Cut the head into florets - just turn it upside down and slice off the small clusters. If a floret is too large, cut it into smaller pieces.
Step 3
Bring a large pot of water to a boil, add salt. Add the cauliflower and bring back to a boil. Cook for about 10 minutes until tender.
Step 4
Drain the cooked cauliflower in a colander. Let the water drip off and the florets dry slightly - excess moisture will prevent good frying.
Step 5
Heat a skillet over medium heat. Melt butter in it (you can substitute with clarified butter, lard, or high-smoke-point vegetable oil such as refined sunflower, olive, or grape seed oil).
Step 6
Place the cauliflower in the skillet. Fry gently, stirring carefully to avoid breaking the tender pieces. Cook for about 5 minutes, until lightly golden brown.
Step 7
Crack the eggs into a bowl and beat lightly with a fork until yolks and whites are well combined. Pour the egg mixture over the cauliflower. Increase the heat slightly.
Step 8
Stir the eggs and cauliflower quickly so the eggs cook evenly, similar to scrambled eggs. The faster it cooks, the softer and more tender the result. Taste and add salt if needed. The fried cauliflower is ready! Serve hot, optionally sprinkled with freshly chopped herbs. Enjoy!
