Fried Capelin in a Skillet

Preparation
Step 1
It’s best to use fresh capelin, but it’s usually sold frozen. Remove the fish from the freezer in advance and let it thaw at room temperature. Then rinse it well and pat dry with paper towels to remove excess moisture.
Step 2
In a small bowl, mix flour, salt, and fish seasoning (or your favorite spice mix for seafood).
Step 3
Dredge the fish in the flour mixture, coating it on all sides. Preheat a skillet over medium heat and add vegetable oil (about 3 tablespoons / 45 ml). Place the floured fish into the hot oil and fry for 3-4 minutes on each side over low heat.
Step 4
The fish cooks quickly since it’s small. It should turn a beautiful golden color.
Step 5
Transfer the cooked capelin to a plate lined with paper towels to remove excess oil.
