Fresh Green Asparagus in the Oven with Vegetables
Perhaps the tastiest and brightest-flavored vegetables. The dish turns out very aromatic and appetizing. A plate of these vegetables is sure to please many. On hot days, they can be served chilled. Vegetables baked in the oven are excellent as a dish on their own, as well as a side for meat and potatoes.

Preparation
Step 1
Prepare all the necessary vegetables. Take a sprig of sweet, fragrant cherry tomatoes, young green asparagus, mini bell peppers, and garlic.
Step 2
Rinse everything well and thoroughly in clean cold water.
Step 3
Trim the thick ends from the base of the asparagus. They are usually very tough and will not be suitable for further cooking. I cut off about 2 cm, about 0.8 inch, from each spear.
Step 4
Separate the head of garlic into cloves. Rinse the unpeeled garlic in clean water, then dry it with paper towels. Press each clove lightly with a knife so it becomes slightly flattened.
Step 5
Place the cloves into a baking dish. I usually use a glass or ceramic dish for this recipe. Drizzle the garlic with a small amount of olive oil, lightly salt and pepper it. Put the dish into a preheated oven, top-and-bottom heat, at 200°C (390°F), and bake the garlic for 20 minutes.
Step 6
Using a toothpick, make several small holes in the tomatoes and peppers.
Step 7
Carefully remove the dish from the oven, being careful not to burn yourself. Add the cherry tomatoes, bell peppers, and asparagus to the baked garlic. I cut each asparagus spear in half because the whole spears did not fit into the dish. Drizzle everything again with a small amount of olive oil, then salt and pepper to taste.
Step 8
I usually add a pinch of nutmeg and a mixture of herbes de Provence; they go very well with the vegetables. Return the dish to the oven and bake for about another 30 minutes.
Step 9
The vegetables are ready and can be served.
