French onion soup

- tablespoon - 20 ml

Preparation
Step 1
Melt the butter in a medium-sized ovenproof pan. Add the sliced onions and chopped garlic and cook gently over low heat for 30-35 minutes, stirring occasionally, until the onions become very soft and turn a rich, dark brown. This slow caramelisation is essential - it gives the soup its depth of flavour and colour.
Step 2
Pour in the wine, scraping the bottom of the pan to lift all the browned bits. Bring to the boil, then add beef stock.
Step 3
Return to the boil and simmer for 10-12 minutes.
Step 4
Meanwhile, prepare the croutons. Toast the bread on both sides, rub with the cut garlic clove, top with grated cheese, and place under the grill until the cheese has melted.
Step 5
Taste the soup and adjust the seasoning with salt and freshly ground black pepper. Stir well.
Step 6
Lay the cheesy croutons on top of the soup and scatter over some chopped fresh parsley.
Step 7
To serve, ladle the soup into bowls, making sure each portion includes a cheesy crouton. Serve immediately before the croutons soften too much.
