Freezer jam
A simple, no-cook freezer jam bursting with fresh fruit flavour. Quick to prepare and perfect for preserving seasonal berries - just mix, jar, freeze, and enjoy whenever you like.

Preparation
Step 1
Roughly crush the fruit in a large bowl, then add the sugar, vanilla, and lemon juice. Stir vigorously for about 3 minutes, until everything is fully combined and the sugar begins to dissolve.
Step 2
Ladle the mixture into a jug, then pour it into sterilised jam jars or small freezer-proof containers with lids. Leave about 1 inch of space at the top (or half that if using mini jars) to allow for expansion as the jam freezes. Seal with the lids and leave the jars at room temperature for 24 hours.
Step 3
Transfer the jam to the freezer until ready to use. Remove from the freezer about 1 hour before serving to allow it to defrost.
