Preparation
Step 1
Prepare the ingredients. Use kefir of any fat percentage; the original recipe uses 2.5%. You can replace the baking soda with baking powder. The vanilla sugar may be omitted or replaced with vanilla powder. Bring the egg and kefir to room temperature beforehand.
Step 2
Combine the egg, sugar, vanilla sugar and salt in a bowl.
Step 3
Beat with an electric mixer or whisk thoroughly until smooth.
Step 4
Add the kefir and 2 tablespoons plus 2 teaspoons of vegetable oil.
Step 5
Whisk until evenly combined.
Step 6
Sift the flour and baking soda into the bowl. You may need slightly more or less flour than specified, so judge by the consistency of the dough.
Step 7
Knead into a soft dough and leave it to rest for approximately 20 minutes.
Step 8
Divide the rested dough into two portions and roll each one into a round approximately ⅜ inch thick.
Step 9
Cut the dough into strips approximately 1¼–1½ inches wide.
Step 10
Cut the strips into rectangles and make a slit in the center of each one.
Step 11
Pull one end of each rectangle through the central slit to form a twisted pastry.
Step 12
Heat vegetable oil well in a frying pan. Add the shaped pastries and fry them over medium heat.
Step 13
Cook the pastries on both sides until evenly golden.
Step 14
Serve the soft fried kefir twists hot or cooled with sour cream, condensed milk or jam. Sprinkle with powdered sugar, if desired.
