Fluffy Cottage Cheese Casserole (Oven-Baked)

Step 1
How to make a fluffy casserole: Prepare the ingredients. Use full-fat cottage cheese for the tastiest result (it will be higher in calories). If the cottage cheese is dry, add a small amount of sour cream or plain yogurt. With this amount of sugar, it will be moderately sweet - adjust to taste. You can replace the flour with cornstarch for an even more tender texture.
Step 2
Separate the eggs into whites and yolks. Do this carefully so no yolk gets into the whites - even a drop can prevent them from whipping properly. Refrigerate the whites.
Step 3
Add sugar, cottage cheese, vanilla, and flour to the yolks.
Step 4
Blend everything with an immersion blender. Don’t skip this step: the mixture will become very smooth and delicate, making the casserole fluffy and soft. Simply stirring the cottage cheese won’t give the same effect. If you don’t have a blender, rub the cottage cheese through a sieve.
Step 5
Take the whites out of the fridge. Add a pinch of salt - this helps them whip and enhances the overall flavor. Beat with a mixer until stiff peaks form (the mixer leaves clear tracks that don’t collapse after you stop).
Step 6
Add the whipped whites to the main mixture.
Step 7
Gently fold the whites into the cottage cheese mixture using a silicone spatula or a whisk. Fold from bottom to top, as if “lifting” the whites. The air in the whipped whites will raise the casserole as it bakes.
Step 8
Choose a baking dish. The smaller the dish, the taller the casserole will be. Mine is 18 cm (about 7 inches) in diameter. Grease it with a small piece of butter.
Step 9
Pour the batter into the dish and smooth the top.
Step 10
Bake in a preheated oven at 190°C / 374°F, top-and-bottom heat, for 45-50 minutes. Judge by appearance: it should be nicely browned. The casserole rises a lot while baking and then falls as it cools - this is normal because it’s made like a soufflé and has a similar structure. It’s delicious both warm and cold.
