Fluffy American pancakes
Fluffy, golden American-style pancakes made with a simple batter and cooked until perfectly risen and tender. Ideal for breakfast or brunch.

Preparation
Step 1
Sift the flour, baking powder, salt, and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
Step 2
Pour the milk mixture into the dry ingredients and use a fork to beat until you have a smooth, thick batter. A few small lumps will disappear with gentle mixing. Let the batter rest for a few minutes.
Step 3
Heat a non-stick frying pan over medium heat and melt a knob of butter. Once it’s bubbling, add a ladleful of batter (or two, if your pan is large enough for more than one pancake). The batter will be thick - this is exactly as it should be.
Step 4
Cook for about 3 minutes, or until bubbles form on the surface and the edges begin to set. Flip the pancake and cook for another 2 minutes, until both sides are golden brown and the pancake has risen to around 1cm/½in thick. Reduce the heat slightly if the pancakes brown too quickly.
Step 5
Repeat until all the batter is used, keeping cooked pancakes warm in a low oven if needed (though they’re best straight from the pan).
Step 6
Serve with plenty of real maple syrup, extra butter or fresh fruits.
