Flourless Chocolate Cake

Preparation
Step 1
Use large eggs. If you have small ones, take 5. The chocolate should be dark (56-72% cocoa). If you use milk chocolate, reduce the sugar by ⅓-½ to prevent the cake from being too sweet. You can use fine or coarse oats.
Step 2
In a saucepan, combine butter and broken chocolate pieces. Heat over low flame, stirring constantly until melted. Remove from heat and let cool.
Step 3
Place the oats in a blender and grind them until almost flour-like.
Step 4
Mix the ground oats immediately with baking powder.
Step 5
Separate egg yolks and whites carefully so that no yolk gets into the whites. The whites should be cold, and the bowl must be clean and dry - otherwise, they won’t whip properly. Place the bowl with whites in the refrigerator.
Step 6
Beat the yolks with sugar until light and fluffy.
Step 7
Pour the chocolate-butter mixture into the yolks and whisk again.
Step 8
Add the ground oats and baking powder.
Step 9
Mix thoroughly with a spatula or mixer - the dough will be thick and sticky.
Step 10
Beat the egg whites until firm peaks form - they should hold their shape when you lift the whisk.
Step 11
Gently fold the whites into the batter in several additions, mixing from top to bottom each time. The batter will gradually loosen.
Step 12
Pour the batter into a buttered loaf pan (or any heat proof pan). Silicone pans don’t need greasing, but metal, ceramic, or glass ones should be lightly oiled. Bake in a preheated 340°F (170°C) oven for about 20-40 minutes. Check with a wooden skewer - it should come out dry.
Step 13
Remove the cake from the oven, let it cool slightly in the pan, then transfer to a plate. Serve warm or cooled. Enjoy!
