Eggplants in Foil over Charcoal
The most delicious, aromatic, and appetizing - and healthy too! Cooking eggplants at a picnic is easy, yet the result is an incredible dish that every eggplant lover will enjoy.

Step 1
How to grill eggplants in foil over charcoal? Prepare all the ingredients needed for the recipe.
Step 2
Rinse the eggplants under cold water and pat dry with paper towels. Peel the garlic and cut each clove into thin slices. Adjust the amount of garlic to taste.
Step 3
Make deep cuts lengthwise along each eggplant (2-3 slits or more).
Step 4
Insert 2-3 slices of garlic into each cut.
Step 5
Do the same with the other eggplants. At this stage, you can sprinkle them with your favorite dry spices, though in this recipe, I use only garlic.
Step 6
Wrap each eggplant in 2-3 layers of foil.
Step 7
In a small bowl, pour in some refined vegetable or olive oil. Press or finely chop a few cloves of garlic, mix with the oil, and let it sit for 20-30 minutes to infuse.
Step 8
Light a fire. Once the wood burns down and you have glowing coals, start cooking.
Step 9
Place the wrapped eggplants directly on the hot coals. Cook for about 20 minutes, turning them occasionally. The eggplants should become soft - check by piercing with a toothpick or knife through the foil.
Step 10
Remove the eggplants from the coals and carefully slice them lengthwise. Add salt to taste.
Step 11
Drizzle the eggplants with the garlic oil (or brush it on with a silicone brush). Sprinkle with fresh herbs - dill, parsley, cilantro, or green onions. You can serve them in the foil or on a plate.

These foil-baked eggplants are delicious both hot and cold. Serve as a main dish or as a side to meat, kebabs, or cutlets.
