Eggplant Rolls with Cheese, Ground Meat, and Garlic

Preparation
Step 1
First, prepare all the necessary ingredients and spices for making stuffed eggplant rolls in the oven.
Step 2
Slice two eggplants lengthwise into slices about 2 mm thick.
Step 3
Place the sliced eggplants on a baking sheet lined with parchment paper and brush them with 4 tablespoons of olive oil.
Step 4
Sprinkle the oiled slices with salt and a mix of red and black pepper to taste. Then, place the baking sheet in a preheated oven at 200°C (390°F) for 10 minutes.
Step 5
Heat 2 tablespoons of vegetable oil in a frying pan, add one finely chopped onion, and sauté over high heat, stirring.
Step 6
Add one finely diced tomato to the pan and continue sautéing the vegetables while stirring.
Step 7
Add 2 cloves of pressed garlic, salt to taste, and ½ teaspoon of khmeli-suneli (a Georgian spice blend). Cook for another 2 minutes.

Add 300 g (10.5 oz) of mixed ground meat to the pan and fry for about 10 minutes, stirring occasionally.
Step 9
Add 150 g (5 oz) of boiled rice and mix everything well.
Step 10
Grate 40 g (1.4 oz) of hard cheese using a fine grater, then add half of it to the pan.
Step 11
Add finely chopped parsley and dill to taste, along with a little red and black pepper mix.

Mix all the ingredients thoroughly, then turn off the heat and let the filling cool slightly.

Place a portion of the filling on each baked eggplant slice.

Gently roll each slice into a tight roll.
Step 15
Arrange the filled rolls on a parchment-lined baking sheet, sprinkle with the remaining grated cheese, and bake in a preheated oven at 180°C (355°F) for 10 minutes.
