Which eggplant to choose for rolls? Pick a firm, large eggplant with shiny, dark, undamaged skin and the stem intact.

Wash the eggplant and pat dry with paper towels. Cut off the stem and slice lengthwise into thin strips about 0.2-0.3 inch (0.5-0.7 cm) thick.

To remove bitterness, sprinkle the slices with salt, place them in a colander, and let sit for 15-30 minutes. Then rinse under running water and gently squeeze out excess moisture.

Pour refined vegetable oil into a skillet. Fry the eggplant slices on both sides until golden brown. Place them on paper towels to absorb excess oil.
