Easy Semolina Masa

Preparation
Step 1
Place the semolina flour, yeast and salt into a large mixing bowl and stir to combine thoroughly.
Step 2
Add the honey and water, mixing until you have a smooth, lump-free batter.

Cover the bowl and leave it in a warm place to proof for 45 minutes, allowing the mixture to rise.
Step 4
After proofing, stir in the baking powder until fully incorporated.
Step 5
Heat a masa pan over a medium heat and add about ½ teaspoon of oil into each mould.
Step 6
Pour the batter into the moulds, filling each one about three-quarters full.
Step 7
Cook for 2-3 minutes, then carefully flip each one over using a skewer. Cook on the other side for a further 1-2 minutes, until golden brown and cooked through.
Step 8
Serve warm with suya spice, hot sauce, vegetables, or a drizzle of honey.
