Easy Mexican bean stew

Yellow bell pepper

Canned tomatoes

- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Spray a large frying pan with oil and place it over medium heat. Add the chopped onion and garlic, then cook gently for three minutes, stirring regularly. Add the sliced pepper and cook for another two minutes until slightly softened.
Step 2
Stir in the spices and cook for a few seconds to release their aroma. Add the tomatoes, tomato purée, and all beans (rinsed), then pour in 300ml/10fl oz of cold water.
Step 3
Bring to a gentle simmer, season with a little salt and plenty of freshly ground black pepper, and cook for 30 minutes, stirring occasionally, until the sauce has thickened.
Step 4
Serve this stew with rise, salsa or yogurt.
