Preparation
Step 1
Using tinned lentils for this dish let's you prepare dinner in no time.
Step 2
Heat the oil in a frying pan over medium heat. Add the chopped onion and crushed garlic, frying for 2 minutes until softened and fragrant. Stir in the spices and cook for another 2 minutes to release their flavor.
Step 3
Add the tomato purée, dried and rinsed lentils, and vegetable stock. Bring the mixture to the boil, then reduce the heat and let it simmer gently for 5 minutes. Stir in the cream and season to taste with salt and pepper.
Step 4
Pour the lentil curry into a warm bowl and serve immediately with warmed chapatis or fluffy rice on the side.
