Preparation
Step 1
How do you make Easter kulich icing from egg white and powdered sugar? Prepare the needed ingredients. These proportions can easily be adjusted for 1 or 2 egg whites. I have 12 kulichi ready, so I’m making a lot of icing. My eggs are size C1. If your eggs are a different size, the amount of powdered sugar will change.
Step 2
Separate the whites from the yolks. Pour the egg whites into a deep bowl and lightly whisk with a whisk or mixer until a light foam appears, so the protein structure loosens.
Step 3
Start adding powdered sugar in portions, mixing it into the whites. Gradually, the sugar will dissolve.
Step 4
During mixing, add 1 tablespoon of lemon juice. It adds a slight tang and makes the icing whiter.
Step 5
As you add powdered sugar, the kulich icing will become thicker.
Step 6
You can control the thickness by adding more powdered sugar or lemon juice. Mine turns out thick like this - it spreads well on kulichi and barely drips.
Step 7
Coat the tops of the kulichi with the icing and immediately add Easter sprinkles/decor. Work quickly, because the icing forms a crust and starts drying fast. If you’re not keeping up, you can mix in a bit more lemon juice. Leave the iced kulichi to stand until the icing is completely dry. Cook with pleasure!
