Double-baked potatoes
Delicious loaded baked potato skins filled with creamy mashed potato, crispy bacon, peas, and melted cheese - perfect as a comforting snack or side dish.

Preparation
Step 1
Preheat the oven to 220C.
Step 2
Heat the oil in a small frying pan over medium–high heat and cook the bacon pieces for about 5 minutes until they start to crisp. Add the chopped onion and continue cooking for another 5 minutes until softened.
Step 3
Meanwhile, place the peas in a microwave-proof bowl, cover, and microwave for 3 minutes until defrosted, or cook in a small saucepan of boiling water for 2 minutes. Drain thoroughly.
Step 4
Slice the cold potatoes in half and scoop out the insides into a large bowl, leaving empty skins. Mash the scooped-out potato, then stir in the crispy bacon mixture, peas, and soft cheese. Season well with salt and pepper.
Step 5
Spoon the mashed potato mixture into the potato skins, top with extra cheese, and place on a baking tray. Bake for 20-25 minutes until heated through and golden-brown on top.
