Diet Baked Cottage Cheese Pancakes

Preparation
Step 1
Use soft, smooth cottage cheese without lumps for tender pancakes. If your cottage cheese is grainy, blend it or press through a sieve. You can use ready-made oat flour or make your own by grinding rolled oats in a coffee grinder.

Sift the oat flour, especially if homemade, to remove any coarse particles or impurities.

In a mixing bowl, combine cottage cheese, egg, sugar, and vanilla. You can replace regular sugar with brown cane sugar for a healthier version.

Add the sifted oat flour and mix well. You might need a little more or less flour depending on the texture of the dough.

The dough will be slightly sticky. Let it rest for 20 minutes - the gluten will swell, making it easier to shape the pancakes.

Form small pancakes and place them on a baking sheet lined with parchment paper. If needed, lightly brush the paper with vegetable oil.

Bake in a preheated oven at 180°C (350°F) for about 20 minutes, until golden. Adjust time as needed for your oven. They will rise while baking and settle slightly when cooled. Be careful not to overbake so they stay moist.
