Preparation
Step 1
First, prepare all ingredients. You may use any cheese that melts well. Non-brined mozzarella for pizza or firm meltable cheeses like Gouda work great. Choose cheese in rectangular blocks so you can cut even sticks.
Step 2
Beat the eggs until smooth. Use large eggs; if yours are small, use three.
Step 3
Cut the cheese into equal sticks about 4 inches (10 cm) long and ½ inch (1 cm) thick.
Step 4
Coat each cheese stick thoroughly in flour.
Step 5
Dip each stick into the beaten eggs, including the ends. If you see you need more egg mixture, add another egg and beat it. Two large eggs were enough for 10 sticks.
Step 6
Roll the sticks well in breadcrumbs. For a pretty appearance and tight coating, choose coarse yellow breadcrumbs with spices. If you have plain pale breadcrumbs, add paprika, turmeric, salt, and pepper to taste.
Step 7
Prepare all the cheese sticks the same way. It’s easier to coat them using tongs or by spearing the cheese with a fork; coating with hands is inconvenient, as breading sticks better to your fingers than to the cheese.
Step 8
Heat vegetable oil in a deep, small-diameter skillet (about 8 inches) over medium heat. Fry the cheese sticks for 1-1.5 minutes on each side until golden. Remove earlier if the cheese starts to ooze. Place fried sticks on paper towels to remove excess oil.
Step 9
Serve immediately while the cheese inside is hot and stretchy. Pair with any sauces - berry sweet-sour sauce, ketchup, spicy tomato sauce, mayonnaise, etc. Enjoy!
