Preparation
Step 1
Any cucumbers will work, even those with imperfections. Adjust the amount of dill to your taste - use a small bunch or a large one if you like a strong dill flavor. Wash and dry the cucumbers and greens.
Step 2
If the cucumbers have tough or damaged skin, peel them. Slice the cucumbers into rounds, half-moons, or quarters - however you prefer.
Step 3
Place the cucumbers into a suitably sized pot. Peel the onions, rinse, and pat dry with paper towels. Slice them into thin half-rings or quarter-rings and add them to the cucumbers.
Step 4
Finely chop the dill and add it to the cucumbers and onions.
Step 5
Add sugar, salt, vinegar, and refined vegetable oil to the pot.
Step 6
Mix everything thoroughly and let it sit for 2-3 hours. Meanwhile, sterilize jars and lids in any convenient way - in the oven, over steam, or in the microwave.
Step 7
Once the cucumbers have released enough juice, place the pot on the stove. Bring to a boil over high heat, then reduce to medium and cook for 5–7 minutes, stirring gently so the cucumbers keep their shape. When the salad changes color, it’s ready for the next step.
Step 8
Spoon the hot salad into sterilized jars and seal them immediately. Turn the jars upside down, wrap them in a warm blanket, and leave them until completely cooled.
Step 9
Your cucumber and onion salad for winter is ready! Store it in a cool, dark place for a long time.
Step 10
Serve this cucumber and onion salad with meat, kebabs, potatoes, or any other side dish - it’s irresistibly delicious!
