Cream Number One Cake for a First Birthday
Beautiful, festive and delicious - perfect for a baby’s birthday! The Number One cake for a girl’s first birthday will take some effort and time, but the result will really please you. If you wish, you can add any fruits and berries to the filling. By slightly changing the decoration, you can make the same cake for a boy’s first birthday.

Step 1
How to make a cream Number One cake? Prepare all the necessary ingredients. Sift the flour through a sieve to enrich it with oxygen.
Step 2
Combine the eggs with the sugar and beat at maximum mixer speed until you get a fluffy, thick white mass. Thanks to this fluffiness, the sponge will also be airy.
Step 3
Bring the milk with the butter to a boil and let the butter melt completely. Mix the flour with the baking soda and vanilla. Add the hot flour mixture and the hot milk mixture to the egg batter alternately (in 2-3 additions) and gently fold in by hand with a whisk. Do not beat.
Step 4
The finished batter will be neither runny nor very thick, but very airy. You can even see that it is full of air - bubbles are rising from it.
Step 5
Line three baking sheets (about 35×25 cm / 14×10 in) with parchment and pour the batter onto them. Spread it out evenly and bake in an oven preheated to 180 °C (356 °F) for 20-25 minutes. Rely on your own oven.
Step 6
The baked layers will turn golden. Take them out of the oven and let them cool. Trim each sponge layer on all sides - this browned crust is not needed.
Step 7
From the layers, cut out the number 1, matching the size of your cake board. My board is 30×40 cm (about 12×16 in).

From the trimmings of the sponge I cut out little booties for the future cake decoration.
Step 9
For the cream for the filling and crumb-coating you will need whipping cream with at least 33% fat and powdered sugar. You can grind regular sugar to powder in a coffee grinder.
Step 10
For the filling, whip the cream with the powdered sugar into a fluffy, stable cream. My cake is for a one-year-old girl, so I added a little pink food coloring to the filling. For a boy’s cake you can use blue coloring.
Step 11
Soak the sponge layers with any syrup, sweet water or just plain water (to your taste), spread them with the cream and assemble the cake. Place the cake in the refrigerator for at least 6 hours, preferably overnight. During this time it will soak, and the cream will set.
Step 12
In the same way, whip cream with powdered sugar for the outer crumb coat. Cover the cake with this cream on top and on the sides.
Step 13
Place the future little booties in the desired place on the cake.
Step 14
For the decoration we will make a meringue (egg white) cream. Carefully separate the egg whites from the yolks into a clean, dry and degreased bowl.
Step 15
In a small saucepan combine the sugar and water. Place over heat, bring to a boil and cook until 120 °C (248 °F). You can roughly determine the temperature with the “soft-ball” caramel test. Drip a little caramel into cold water: it should easily roll into a soft ball between your fingers. At the same time, whip the egg whites until fluffy.
Step 16
Without stopping the mixer, pour the hot syrup in a thin stream into the egg whites. Continue whipping the cream for a few more minutes, until it starts gathering into a lump around the whisk. The cream will become thick and very stable.
Step 17
Decorate the top surface of the cake and the little booties with this cream.
Step 18
Then go around the sides of the cake and decorate the perimeter with the cream as you like. Keep the finished first-birthday cake for the girl in the refrigerator until it is time to serve it at the party. Enjoy the treat!
