Country-Style Zucchini with Peppers and Garlic in the Oven
Aromatic zucchini with a crispy crust and tender inside. You can bake the zucchini in slices or rounds, whichever you prefer. Serve as a main dish or as a side to meat - a sour cream sauce pairs perfectly with it.

Step 1
How to make country-style zucchini? First, gather all the necessary ingredients and measure out your favorite spices. You can adjust the type and amount of spices to your family’s taste.

In a mixing bowl, combine garlic powder, a mix of black, green, pink, and white peppers (grind them in a mill), thyme, and smoked paprika. Add the needed amount of vegetable oil and stir thoroughly to form a spiced oil mixture.
Step 3
Rinse the zucchini under running water. If they are young, you don’t need to peel or remove the seeds. Older zucchini should be peeled and deseeded. You can scoop out the seeds with a spoon or slice the zucchini and remove them with a small knife. Cut the prepared zucchini into your preferred shape - I like wedges for this recipe.
Step 4
Line a baking tray with parchment paper. You can leave it ungreased, but I prefer brushing it lightly with oil. Place the zucchini slices into the spice and oil mixture and gently stir to coat evenly. Make sure all the pieces are covered with the aromatic seasoning.
Step 5
Preheat the oven to 350°F (180°C) on top-and-bottom heat. Spread the zucchini pieces on the tray and bake until golden. Cooking time depends on your oven and the size of the pieces - mine took about 20 minutes in an electric oven.

That’s it! Delicious, fragrant zucchini are ready. Garnish with fresh herbs or serve with your favorite sauce if desired.
