Preparation
Step 1
Prepare ingredients: quality butter, sour cream (20-30%), milk (3.2%), dry or fresh yeast (8 g fresh).
Step 2
Warm milk to 38-40 °C (100-104 °F), add 1 tsp sugar, and 3 Tbsp flour to make a sponge.
Step 3
Add yeast, mix, cover, let sit 15-20 min until bubbly.

Melt butter, mix with sugar, salt, and sour cream. Combine with sponge.

Gradually add flour: 1/3 at a time with whisk, then knead remaining by hand.

Knead until smooth (~5 min), form a ball, cover, let rise 1 hour in warm place.

Prepare filling: mix cottage cheese (9-18% fat), egg, sugar, and vanilla until smooth.

After dough rises, punch down and roll on a work surface (no extra flour needed).

Roll dough into ~30×35 cm rectangle, 5-7 mm thick.

Spread filling over dough, leaving 1 cm border on two short sides and one long side.

Roll dough tightly along filled long side, seal seam, distribute filling evenly by hand.

Cut roll into 12 equal pieces.

Prepare baking tray(s) lined with parchment. Place swirls, cut side up.

Cover swirls with a towel, let rest 30 min until slightly risen.

Prepare sour cream glaze: mix thick sour cream with sugar and vanilla.

Preheat oven to 170 °C (338 °F), top-bottom mode if electric.

Bake swirls 45 min until golden brown.
