Cottage Cheese Swirls from Puff Pastry in Sour Cream Topping

Preparation
Step 1
Thaw the pastry according to the manufacturer’s instructions. I used non-yeast dough with two sheets. Use any cottage cheese; I used store-bought 9% grainy, not too dry. I used vanilla sugar as flavoring, but cinnamon works too. Sour cream should ideally be 15% fat.
Step 2
Roll out the pastry sheet to 0.3 cm thickness in one direction to preserve the layers. Brush with beaten egg. Sprinkle evenly with regular and vanilla sugar (or cinnamon). Mash the cottage cheese with a fork to remove large lumps, and spread half of it on the dough, leaving about 1.5 cm from the edge.
Step 3
Roll the sheet into a loose log. Start from any edge and roll toward the center; fold the second part toward the center as well. Cut with a sharp knife into strips 2.5 cm wide to form swirls. Repeat with the remaining sheet.
Step 4
Place the swirls immediately on a baking sheet. I use a reusable non-stick mat; otherwise, use parchment lightly greased with vegetable oil. Brush the sides and tops with beaten egg and sprinkle lightly with sugar.
Step 5
Bake in a preheated oven at 392°F (200°C). After 5 minutes, reduce to 356°F (180°C) and bake until golden, about 20-30 minutes. Mix the sour cream with sugar. Brush the hot swirls with the sour cream topping, including the sides, then return to the oven for 1-2 minutes to set.
Step 6
Serve warm or cooled. Optionally, sprinkle with powdered sugar on top. These swirls are so tasty they disappear quickly. Makes about 18 pieces. Store in the refrigerator; reheat slightly before serving if needed.
