Cottage Cheese Muffins in the Oven (in Silicone Molds)

Preparation
Step 1
Use high-quality butter - it determines the flavor. Any type of cottage cheese will do, but it should be smooth, not too wet. If it’s grainy, press it through a sieve or blend until uniform.

Sift the flour into a bowl to enrich it with air - this will make the muffins light and fluffy.
Step 3
In a large dry bowl, crack the eggs (washed and dried beforehand). Add a pinch of salt and beat with a mixer until foamy.

Gradually add sugar while continuing to beat. Mix until the mass becomes pale and airy.
Step 5
Add the blended cottage cheese to the egg mixture and beat again until smooth.
Step 6
Melt the butter (using a double boiler or microwave) and pour it into the batter. Mix well with the mixer.
Step 7
Mix some flour with baking powder, then gradually add the flour mixture to the batter, stirring after each addition with a spoon or silicone spatula. The batter should be thicker than for pancakes.
Step 8
Silicone molds don’t need greasing since the batter already contains butter. Fill each mold about two-thirds full (≈1 tablespoon). Bake in a preheated oven at 180°C / 350°F for about 30 minutes.
Step 9
Check doneness by inserting a toothpick - if it comes out dry, they’re ready. Remove from the oven, let cool slightly, and carefully remove from the molds. Dust with powdered sugar or decorate with berries and mint.

The texture of these muffins is airy yet moist and tender - perfect with a cup of tea or coffee for breakfast.
